The growing area of the grapes for the "In Primis" is the Salento-Peninsula in the provinces of Brindisi and Lecce.
The grapes were ripened with the "Apulian Gobelet" method in 25-30 years old vineyards. Harvesting time is September 10th to 20th,
the grapes were manually harvested.

Vinification & Maturation:
Vinification is performed in steel vats and includes the typical carbonic maceration, in which temperature is controlled not to exceed
22°C. For several days the must is kept in contact with the skins, while continuous delestage ensures this wine is typical bright ruby red colour.
After an aging period in steel tanks, it is kept in barriques for 6 months and then bottled.
Organoleptic qualities
Colour:
deep ruby red, with purple reflections.
Bouquet:
frank smell to the nose with a complex and fine bouquet.
Taste:
round, very structured, full from not aggressive tannins in time for sharpening in barriques.
Food match:
matches very well with the plates of the Mediterranean kitchen, cheeses of medium seasoning and red meats.
Drinking temperature:
18-20 °C
A highly alluring wine with a lot of structure and scents of red berries and spices.
